DESCRIPTION
Proteria® CA is a cultured cane sugar fermented by Lactobacillus paracasei, mainly used to control water activities (aW) and pH stability to form barriers of microorganism’s growth, maximizing overall quality and microbial stability in a variety of culinary products.

REGULATIONS
Proteria® CA is recommended to be labelled as cultured (cane) sugar, which are approved as GRAS by FDA, USA. The regulations governing the use of Proteria® CA vary considerably in the countries in which it is currently approved. Advice regarding the legal status of this product is available on request. It is recommended to use it after ensuring compliance with your local regulations.
 
Conventional methods such as vinegar create a strongly acidic environment to control the pH to prevent microbial spoilage, but it is compromised due to its influence on taste. Proteria® CA works as an alternative to vinegar against Yeast and bacteria in condiments without the effect of taste.
 
Guacamole
0.3 % of Proteria® CA, added directly, is effective against Yeast and bacteria in Guacamole after 12 days of storage at 5°C.
 
Hummus
1% Proteria® CA that is 2g/Kg,on freshly prepared Hummus is effective against Yeasts and Molds after one-month of storage at 4 °C.
