DESCRIPTION
Epolyly® HCL is pure ε-Polylysine HCL concentrate, derived naturally from a controlled fermentation of Streptomyces diastatochromogenes. Epolyly® HCL is an ideal natural broad-spectrum antimicrobial for extending the shelf life of a variety of foods and beverages.

SURIMI
150 mg/Kg of Epolyly® HCL was added in Surimi and It was effective to reduce Total Plate Count and extended the shelf life to 6 days, stored at 5°C.
