Juice-based beverages generally have relatively high levels of sugar and a low pH and this favors the growth of some spore forming bacteria (e.g. Alicyclobacillus). Additionally, Natural colors such as anthocyanins (natural red-purple) are unstable and will cause the reduction of color intensity or color change (browning). Although chemical preservatives such as sodium benzoate and potassium sorbate are widely used for the shelf life extension of juices-based beverages. Consumers’ demand for natural origin, safe and environmental friendly food preservatives has been increasing.

 

Fixolor™ AT is a unique and natural ferment of sugar cane containing Lactic Acid, specially designed to stabilize natural colors (anthocyanins) and to control Alicyclobacillus in juice-based beverages.

Description

Fixolor™ AT is a kind of natural cultured sugarcane fermented by using the bacterium strain Lactobacillus sp., which is used to replace (or partially replace) citric acid for shelf life extension in acidic juices by increasing anthocyanin (color) stability and providing multi-barrier to prevent Alicyclobacillus, yeast and mold.

Usage level

The recommended dosage is range of 0.2 - 0.5% of final product (w/w). Exact dosage depends on the nature of the product for which it is intended.

Storage unopened below 20°C in dry conditions, away from direct sunlight. When opened, store at approx. 20°C in original container.

Shelf life is 24 months when stored according to recommendations.

Fixolor™ AT is naturally occurring organic acid compound, labeled as ‘cultured sugarcane’, the each composition of which are approved as GRAS by FDA, USA.
