Raw hams (Speck)

Raw ham surface mold growth occurs at high relative humidity and rancidity can occur during storage time and temperature. For examples, “Speck” is a traditional product in South Tyrol (Italy) and North Tyrol (Austria), Eurotium rubrum and Pen. solitum are the dominating species in all types and parts of Speck (crust, meat and fat).
