Lysoch® G4 is a food grade lysozyme, produced by fermentation of food cultures, Lysozyme is employed in cheese production to deter late blowing, a defect caused by specific bacteria like Clostridium species that generate gas. Lysozyme's capacity to lyse these bacteria limits gas production, preserving cheese quality during aging.
