Flavoured milk is usually pasteurized, sterilized or heat treated at ultra-high-temperature for extending its shelf life. Bacterial and other microbial (i.e., yeast or molds) off-flavors result from the growth of microorganisms that are resent flavoured milk, for example, chocolate-flavored milk.
