Salad dressings are oil-in-water emulsions stabilized with thickeners. To meet consumers' demands with low-fat content, the water phase became a critical microbiological concern when the oil content decreases. The microflora causing salad dressings spoilage consists of a few species of Lactobacillus, Saccharomyces and ZygosaccharomycesLactobacillus fructivorans is the predominant bacterium in spoiled products.

 

Proteria® CA is a natural weak-acid metabolite produced by Lactobacillus paracasei by fermenting sugar. It works as an alternative to vinegar against L. fructivorans and other bacteria and yeasts, without affecting the taste of salad dressings. While Natap® is a naturally occurring antifungal agent producing during fermentation of Streptomyces natalensis and is highly effective against yeasts and molds.
