The intrinsic properties of poultry such as high water acitivity, pH between 5-7, high protein, vitamin and minerals content, leads to a rapid microbial spoilage by various mircoorganisms (e.g. Pseudomonas spp., Shewanella putrefaciens and Acinetobacter-Moraxella).  Also, these conditions are favorable for the growth of pathogens. 
 
Bacteriophages are novel biocontrol to enhance food safety. As a natural enemy of bacteria, phages specifically kill pathogenskeeping the good bacteria intanct. The addition of PhageX® AS in fresh chicken can highly reduce the counts of Salmonella. Proteria® AL is a label-friendly ingredient of fermented sugar and vinegar, produced by fermentation of specifically selected food cultures. It is highly effective against pathogens such as Listeria monocytogenes. While White Fiber™ can prevent moisture loss in fresh chicken.
