FRUIT JAMS AND PRESERVES
Spoilage of jams or preserves is usually caused by molds, mainly in Eurotium species, though xerophilic Penicillia, especially Penicillium corylophilum, occur from time to time. The addition of 0.1g/kg Plantéria® BF can prevent the mold growth in fruit jams and preserves.
BUTTER AND MAGARINE
Spoilage of butter and margarine are caused by molds, the more coarse and less stable emulsions of reduced-fat spreads may favor mold-spore germination, mycelial development, and sporulation. The addition of 0.1g/kg Plantéria® BF can greatly reduce mold problems during distribution and consumer use.
