Oxidation and development of rancidity are major challenges for food manufacturers, resulting in shortened shelf-life and changes in the quality and nutritional value of their products. Consumers’ interest in natural antioxidants has increased dramatically over the past years and the general trend requires the substitution of synthetic molecules (e.g. erythrobates, BHA, TBHQ, BHT, propyl gallate, and sodium nitrite) with natural compounds.
Guardox™ AE is a natural acerola cherry extract rich in vitamin C used as an antioxidant flavouring for preventing lipid oxidation in processed fruits, RTE meals and meat products.
